Das with one s is an article (das Haus), a pronoun (Das ist mein Buch.) or a relative pronoun (das Buch, das ich lese). You can replace it with dieses, jenes or welches: das Buch, welches ich lese. It can also start a sentence: Das Haus ist groß.

dass with two s
Dass with two s is a conjunction: it joins two sentences and introduces a subordinate clause with the verb at the end. It often comes after verbs like wissen, sagen, glauben, hoffen, denken, finden and after expressions like “Es ist schön, dass …”: Ich weiß, dass du kommst. You cannot replace it with dieses or welches.
Example Ich weiß, dass du kommst. · Mia sagt, dass sie müde ist.
Two tests
Substitution test: if you can put dieses, jenes or welches, write das. Otherwise write dass. The old letter ß is no longer used in dass since the reform: not “daß” but dass. Sometimes both words appear in the same sentence: Ich glaube, dass das Wetter morgen schön wird.
Example Ich glaube, dass das Wetter schön wird.
